Gum Syrup

Prep ingredients
- 50 g Gum Arabic
- 100 g Water
- 150 g Sugar
Instructions
Gum disperses really well but REALLY slowly in water, so this is best considered a two stage prep by first hydrating the gum over night in the fridge. It’s not worth the chaos of trying to force this one! 1) Combine gum and water in closed container and leave in fridge over night. 2) Add sugar to the mix and stir until dissolved. You can use light heat to speed up the sugar dissolving, but keep it on low to mimimise evaporation which throws off the ratio. Based on 1862 spec in appendix to Jerry Thomas' book.
