Prep ingredients

• 100 g Sugar (Caster)
• 50 g Bergamot Zest
• 10 g Bergamot Leaves
• 200 g Water

Instructions

Prepared like any other oleo saccharum and then turned into a 1:2 syrup (1 part sugar to 2 parts water). Cover the zest and leaves with sugar and leave over night to extracts oils through osmosis. Then add water to dissolve and fine strain
