Prep ingredients

• 1000 g Pineapple (With Skin)
• 1000 g Water
• 1 Caster Sugar
• 1 Malic Acid

Instructions

Place 1kg pineapple with skin in a hot oven and caramelise. Add wood chips for smokey flavour. Blend 50/50 with water, skin and all. Strain over a coffee filter. Add 35% of total volume in sugar (+ malic acid to balance)
