- 500 g Lemon Juice
- 17.5 g Agar Agar
Instructions
Measure 165g of lemon juice into a pot. Add agar agar (3.5% of the total weight of the juice). Whisk together for 3 minutes. Warm the liquid up to 60 celsius while whisking for 3 minutes to hydrate the agar. Slowly add the rest of the juice (don't let the temperature go under 35 celsius). Put the pot to cool into an ice bath. After cooling, gently break down the gel and sieve through a wet muslin cloth.
