Prep ingredients

• 1200 g Raspberries
• 12 g Pectinase
• 12 g Cellulase

Instructions

Combine 1200g fresh raspberries with 1% pectinase (12g) and 1% cellulase (12g) in Thermomix. Blend gently 10 sec at Speed 3. Set Thermomix to 45°C, reverse, Speed 1 for 60 min to macerate enzymatically. Rapidly chill to below 10°C in ice bath. Strain slowly through Superbag under gravity. Collect clear filtrate.
