- 500 ml Clarified Mango Juice
- 375 g Sugar
- 5 g Citric Acid
- 5 g Malic Acid
- 3 ml Pandan Extract
Instructions
Clarify the mango juice using 0.2% agar (1g per 500ml). Pass through a cheesecloth to filter out solids and achieve a clear liquid. Combine the clarified juice with sugar, pandan extract, citric acid, and malic acid. Stir until the sugar and acids are fully dissolved. Store refrigerated in a sterilized bottle.
