- 500 g Redcurrants
- 250 g Hot Water
- 250 g Caster Sugar
Instructions
This syrup is slightly more involved than others as Redcurrants are very high in pectin which is often used as thickeners meaning it’s easy to accidentally to this into a jam once it cools and settles. - add water and berries to a pan at low-medium heat - lightly muddle and break up the berries to release juices - let simmer for 5-10 minutes - add sugar and stir to dissolve - run everything through a fine strainer and optionally a coffee filter Bottle up and store cold
