Prep ingredients

• 150 g Comice Pears
• 50 g Caster Sugar
• 2 g Malic Acid
• 375 ml Water
• 125 ml Dry White Sherry

Instructions

Roughly chop the fresh pears and combine with the rest of the ingredients. Blend with a hand blender making sure the sugar and acid are well dissolved. After blending add 0.5% of Pectinex, then process through the centrifuge to obtain a liquid free of sediment.
